After the first frost we dig up the tubers, let them dry, clean off the soil, trim the stalks, and tuck them into a breathable crate filled with vermiculite to spend the winter in our storage locker.

When first out of the ground moist soil is tightly packed between the tubers. Letting them dry out for a day makes it easier to clean them.
